Semla (Swedish Lent) Buns

Whilst Pancakes are a Shrove Tuesday treat in our house, so too are these amazing Swedish Buns. Simple to make, stunning to see and very yummy to eat! If you like marzipan, you will LOVE these!

Mix together….
375g plain flour
50g sugar
1/2 tsp salt
2 tsp dried instant yeast
1 tsp vanilla paste or essence
1 egg (you’ll need another one later too)
75g margarine or soft butter

Knead this for at least 5 minutes in an electric mixer or for 10 minutes by hand, then cover with a damp cloth and let it rise to double the size (around 2 hours). 

Then make it into eight (for large) or 12 (for small) balls and arrange them together on a baking sheet. Brush with egg and cover again to rise for about 30 minutes. 

Brush with egg once more and bake at 180 degrees for 20 minutes until golden and hollow when you knock the base. 

Cool on a wire rack.

Meanwhile make the filling by blending….
100g marzipan
50g pistachios
3 tbsp milk

And make the cream by mixing…..
400ml whipped cream 
40g Icing Sugar
1/2 tsp of ground cardamon 

When the buns are cold, slice the tops from the bottoms, spread the marzipan mix over and then add cream before sandwiching back together.
Ready to enjoy!!!!!
